Deep in the interior of Colombia’s department of Cauca lies the province of Inzá,⁣⁣ known in Colombia as La Tierra Adentro.  Frequent mudslides and road closures mean⁣⁣ it’s often not easily accessible.  On clear days in the village of Inzá, one can see straight up⁣⁣ to the Nevado del Huila, the highest volcano in Colombia.  The famous Paez River runs⁣⁣ east through the valley, connecting Cauca and Huila.  Very little coffee is grown below⁣⁣ 1,750 meters above sea level. The volcanic soil, elevation, and climate high in these mountains allows for growing outstanding coffee. ⁣⁣⁣

Ferney Quintero cares for his modestly-sized 2 hectare farm in the village of San Jose on the slopes of these mountains.  As the coffee cherries slowly ripen on these slopes, they obtain vibrant acidity reminiscent of blackberries and, perhaps, rhubarb.  This small-lot (a combination of Caturra and Castillo varietals) is de-pulped and fermented overnight before being rinsed and sun-dried under parabolic covers.⁣⁣⁣

Please note: In an effort ensure your coffee arrives as fresh as possible, we roast everything to order.  Website orders are roasted each Wednesday, packaged Wednesday, and shipped on Thursday.  Orders will be filled as quickly as possible depending on availability, but please note that orders placed after Monday may be filled the following week.
